The Swan
Suffolk, Stratford St Mary - Modern British - Pub - ££
An ancient pub with contemporary flair
The 16th-century inn stands proud by the river Stour in the gorgeous Dedham Vale, the heart of Constable country. Its regeneration has been a labour of patient dedication for Mark and Sophie Dorber, with a smart steel-and-glass extension and the on-site Cygnet bakery, which operates – from the pub bar – Friday to Sunday mornings. Sourdough loaves and baguettes sell out quickly, while cinnamon buns and the like lure in the morning coffee crowd. An inspired approach to interior contrasts brings together old beams, cosy corners and sputtering candles with light-filled modernity and terrace dining. Mark Dorber oversees a canny drinks list, with speciality beers a particular draw, while the kitchen offers a modern menu of sturdy rural cooking for healthy appetites. Oysters are having a moment, and there are plates of rare-breed beef, beer-battered haddock, or beetroot gnocchi with whipped feta to follow on. Homely desserts such as bread and butter pudding or summertime Eton Mess...
